Butterbiscuits
Real simple butter biscuits
- 3 eggs
- 130 gr sugar
- 150 gr butter (room temperature)
- Zest of one scrubbed lemon
- 200 gr flour
- 16 gr baking powder
- 3 gr salt
- separate the egs and put the yolks in a bowl. Add the sugar while whisking until you have a light yellow foam. Mix in the butter and the lemon zest.
- Sift the flour, baking powder and salt above the egg and butter mixture. With cold hands knead until you have a soft ball of dough, wrap in cling film and put in the fridge for about 2 hours to rest.
- preheat the oven on 170 degrees celsius, cover a flat baking tray with baking paper. From the dough create 24 small balls of dough, softly press them down to form cookies of about 5mm thick. Place on the baking tray and make sure you have enough space around as they will grow in the oven…
